Cut the thick stalks of broccoli, and discard them. Cut each head in half. Prepare a pot with boiling salted water in it, and a steamer rack over it. Place the broccoli in a steamer rack. Steam until it is tender, for 7 to 12 minutes (depending on the size). Drain and rinse the broccoli under cold water very well. Then chop it in medium size. Transfer it to a bowl, set aside.
Put a pan over medium heat, melt a tablespoon of the butter. Add the bread crumbs and stir until they become golden about 3 to 5 minutes. Transfer the buttered bread crumbs to a plate; set aside.
Heat 2 tablespoons of the butter in a saucepan over medium-high heat until melted. Gently whisk in the flour, and reduce the heat. Pour the Kalleh full-fat milk slowly in several steps. Stir in about 15 minutes until thickened. Season with salt and pepper. Put the Kalleh blue cheese and cook until melted, about 2 minutes. Then remove from the heat.
mix the sauce with the broccoli. Transfer the mixture into the gratin or baking dish that you prepared. Make a smooth surface. Top with the buttered bread crumbs. Cut the remaining butter and dot the top. Put the pan in the preheated oven for 20 minutes until bubbling. Now it is ready to serve!
You can refrigerate the cooked broccoli for up to 24 hours.
If you want to make this broccoli gratin gluten-free, omit the bread crumbs and flour, and use gluten-free crumbs and almond or oat flour.
