Prune Kofta is a popular Middle Eastern dish made from ground lamb or beef with onions and aromatic spices. The meat mixture is shaped into balls, patties, or logs and then grilled and served with pita. But today’s recipe gives you an incredible new way to enjoy this fabulous dish. Instead of grilling the meatballs, you need to spoon the prune kofta mixture into the pastry sheets and arrange them into gorgeous flowers. These prune kofta flowers are going to brighten up your day with their stunning, tasty, and appetizing texture.

Step 1

This prune kofta recipe is so easy. First, heat the vegetable oil in a medium saucepan. Once it is warm through, add the chopped onions and sauté until they are golden and translucent. Then, stir in the minced lamb and cook it for one minute. Use a wooden spoon to break the pieces up. Add the salt, curry powder, and black pepper to the pan. Give it a nice mix until everything is thoroughly combined. Continue cooking your prune kofta mixture until the meat is cooked.

Step 2

Then, add the prune, water, and chicken stock cubes, and stir the Arabian kofta mixture well. Bring it to a simmer on medium-low heat until the liquid is absorbed and the prunes become soft and plump. Add the orange juice, stir the prune kofta mixture once again, and then remove it from the heat. Set it aside.

Step 3

Allow your Arabian kofta mixture to cool slightly. Then add the orange zest and coriander and stir it thoroughly.

Step 4

Place the prune kofta pastry on a clean surface. Add a spoonful of the mixture to the pastry. Try to bring the edges together to shape a flower. Brush the edges with a few drops of water to help the pastry keep its shape.

Step 5

Preheat the oven to 200°C (390°F).

Step 6

Place the gorgeous prune kofta flower on an oven tray lined with parchment paper. Repeat the process with the remaining pastry sheets until the Arabian kofta mixture is used up.

Step 7

Bake the prune kofta flowers in the preheated oven until they are lightly golden for about 15 minutes.

Step 8

Meanwhile, get your hands on the tahini sauce. Mix the tahini,  yogurt, and lime juice in a bowl, and set it aside.

Step 9

Remove the delicious Arabian kofta from the oven and let it cool for 5 minutes. Spoon in a tablespoon of tahini sauce on top of each flower before serving. Enjoy!
