  • 1kilogram carrots (medium-size, peeled and trimmed)
  • 4tablespoons butter
  • 3tablespoonshoney (clear)
  • 1 1/2 tablespoon apple cider vinegar
  • 1tablespoon dark brown sugar
  • 1 1/2teaspoonkosher salt
  • 1/2teaspoon cinnamon (ground)
  • 1/2 teaspoon ginger (ground)
  • 1/4 teaspoon black pepper (freshly ground)
  • 1tablespoon fresh chives (thinly sliced)

Roasted carrots with honey are a healthy, aromatic side dish with wonderful colors to make your holiday family meal stand out. You can serve these easy and tasty carrots with roasted chicken or turkey. This amazing recipe preserves the naturally sweet flavor of carrots, which is usually lost during cooking.

Our carrots will be bathed in honey and butter with our favorite seasoning. It is better to use medium-sized carrots for better flavor penetration. However, if you are using large carrots, you can peel and halve them before roasting. It is impossible to mess up such an easy side dish recipe!

Step 1

Preheat the oven to 204C (400°F) and line a sheet pan with foil. Coat the foil with cooking spray.

Step 2

In a small bowl, mix two tablespoons of melted butter, honey, apple cider vinegar, brown sugar, salt, cinnamon, ginger, and black pepper.

Step 3

Place the peeled and trimmed carrots on the prepared sheet pan. Cut the large carrots in half lengthwise or just cut the thick parts. They must be even in size. Pour the honey mixture on top and toss the carrots in the honey mixture until completely coated.
Then, arrange the carrots in one even layer with a little space between them. Put the sheet pan in the preheated oven and cook the carrots for about 40 minutes, or until carrots are tender and browned. Be careful, the roasting time may vary depending on the type of your oven or the size of the carrots. So, after 30 minutes of roasting, check them regularly.

Step 4

Remove the honey-roasted carrots from the oven and rub them with the remaining two tablespoons of butter. Then transfer carrots to your serving plate and sprinkle with freshly chopped chives before serving.

Cooking Notes

The amount of honey can be adjusted to your taste. You can add more or less depending on your preference.

You are free to add some nutmeg, garam masala, or pumpkin pie spice to your honey-roasted carrots if you like.

You can keep these honey-roasted carrots fresh in the refrigerator for up to 4 days. I don’t suggest freezing them because the texture will be softer after thawing and reheating. It won’t be as pleasant as the fresh roasted ones.

If there are no chives available, you can add freshly chopped thyme, dill, or parsley.
