Step 1

Place all ingredients in a 9*13-inch disposable aluminum pan.

Fire up your smoker grill by lightening charcoal in the charcoal starter. When charcoals start to ash over, dump them into the firebox and top with pecan wood chips. When the smoker grill heats up to 110 Celsius, place an aluminum pan in the smoker.

Step 4

Smoke for 2 hours until Velveeta, Gouda, Pepper Jack, Mexican Cheese Blend, and Willie Classic Cream Cheese melt while stirring every 30 minutes during the smoking time.

Cooking Notes

You can replace ground beef with ground turkey, chorizo, or breakfast sausage.

If the grill is not available, you can cook Queso Dip using the microwave or slow cooker. To have a smoky flavor, you need to add some liquid smoke.

If you do not have a smoker, place a firebox containing pecan wood chips and charcoal on one side of the grill and place the aluminum pan on the opposite side to cook the Queso Dip with indirect heat.
