Step 1

Grease the sides of a 9-inch springform pan slightly and cover the bottom with parchment paper. Then, preheat the oven to 165 °​C.

In a large bowl, add Square Cream Cheese, and using an electric mixer, beat it for about 2 minutes until it turns smooth.

Add 1/2 cup honey,  Icelandic Yogurt, one teaspoon vanilla extract, and orange zest. Mix until well incorporated. Then add eggs one at a time and beat the mixture until combined. Next, add baking powder and whisk to mix well.

Fold fresh blueberries into the yogurt mixture and blend well. Then pour the mixture into the prepared pan and using the middle rack position, bake the cheesecake for about 40-45 minutes. The surface should be a little jiggly. Chill it in the fridge for at least 2 hours.

Step 5

For the blueberry sauce, place a saucepan over medium heat. Add blueberries, two tablespoons of honey, and one teaspoon vanilla extract while stirring occasionally. Once it starts simmering, keep stirring and cooking for about 5 minutes, and using the back of the spoon, puree the blueberries. Then reduce the heat to low and mix cornstarch in the blueberry mixture. Keep stirring until the mixture gets thickened. Switch off the heat and let it cool.

Step 6

Spread the filling over the cracker crust that has been refrigerated. Using a spatula, flatten the surface and chill it in the fridge overnight or at least for 5 hours.

Substituting crackers with cookies like chocolate chip cookies works perfectly, too.

You can skip using gelatin in the recipe, but if so, the yogurt pie needs to be frozen which results in an icy texture.
