Instructions

Step 1

Preheat the oven to 190°C (375°F). Bring a standard muffin tin and line it with paper liners. Set it aside.

In a bowl, whisk the flour, 1/4 cup of cocoa powder, baking powder, baking soda, and salt thoroughly.

Choose another bowl, whisk the remaining cocoa powder and hot water until you have a smooth and silky texture.

Beat the sugar, vegetable oil, eggs, egg yolk, and vanilla on medium speed until it is combined (about 30 seconds to one minute) in the bowl of a stand mixer fitted with a paddle attachment.

Add the cocoa powder mixture and beat the chocolate muffin mixture until it is smooth. In separate additions, add the flour mixture alternating with the sour cream until the cocoa muffin mixture is thoroughly combined.

Scrape down the sides of the bowl if needed and add 2 cups of chocolate chips. Beat the Chocolate Muffin batter until fully combined. Do not over-mix it.
