Instructions

Step 1

In a large bowl, mix flour with sugar and salt. Dissolve the active dry yeast in the warm water, add it into the bowl gently. Then add the eggs and milk, mix everything thoroughly.

When it starts to clump, stir in the softened butter and knead the dough for 10 minutes until smooth and elastic with a soft and buttery texture, shape into a ball. Clean the bowl, drizzle with olive oil slightly, and place the ball-shaped dough in it.

Cover it with a kitchen towel and let the dough rest and rise at room temperature for 1 hour until doubled in size.

Step 2

Dust your work surface lightly with flour, place the dough on it. Use your hand and punch down and knead it for 2-3 minutes and divide it into two equal parts. Form them into balls.

Step 3

Preheat the oven to 350ºF (178ºC). Line the bottom of a baking sheet with aluminum foil and spray with cooking spray.

Step 4

On a floured surface, roll one of the dough balls with a rolling pin. Transfer the dough to the prepared baking sheet, and press it down into the bottom of it. Stretch it to every edge.

Step 5

Mix the zest of 1 ½ lemon and juice from 2 lemons in a bowl. Use an electric mixer to beat in the cream cheese (20% fat) and 1/2 cup sugar into the lemon mixture. Continue beating until the mixture is smooth, creamy and lighten. With a spatula, spread the cheese mixture over the stretched dough. Make sure to cover it completely.

Step 6

Roll the second ball of dough on a floured surface, transfer, and layer it over the cream cheese mixture, gently stretch the dough over the edges. Brush the melted butter over it.

Step 7

In a small bowl, mix the remaining lemon zest with three tablespoons of sugar, sprinkle it over the buttered surface.

Step 8

Bake these fantastic cream cheese lemon bars in the preheated oven for about 30 minutes or until the top is golden and crispy. Let it cool for 20 minutes before transferring to the cutting board. Leave the foil on. Then cut into squares and return to the baking dish and refrigerate it until chilled for 1 hour before serving.

Step 9

Serve it on a fancy plate, and garnish with mint leaves and lemon slices. Bon Appetit!

Cooking Notes

If you like a crunchy crust, bake the dough’s bottom layer first for 15 minutes. Then let it cool for 15 minutes, add the cream cheese mixture, and top layer and bake it.
