Whisk the egg whites in a sand mixer or electric beaters on high speed until the egg whites form stiff peaks. It means they will stand straight. Add the caster sugar to the egg whites a tablespoon at a time and whisk well between each part. The mixture will be thick and glossy once all the caster sugar has been added. Now use a spatula and fold the icing sugar through the mix.
Add the mixture to the prepared springform pan. Arrange the top to create an even layer. Bake in the preheated oven for one hour and forty-five minutes until it has a coffee color. Turn the oven off and let the meringue cool in the oven with the door open for an hour. Do not remove the meringue from the tray or springform pan and let it cool on a rack. It takes a couple of hours to cool completely.
Add the gelatine powder to 1/4 cup of boiling water. Mix well until dissolved. Set aside.
Place the Willie Cream Cheese %28 and caster sugar in a large bowl (stand mixer or electric beaters). Whisk them on medium speed until they form a smooth mixture. Continue mixing and add in the melted white chocolate and gelatine mixture. Now remove the bowl, and use a spatula to fold the cream mixture.
Pour the cream mixture over the meringue base. Smooth the top with a spoon and palace the cheeselova in the fridge until set. This step takes about three to four hours.
Once set, the delicious cheese love is ready to decorate.
Do not remove the cheeselova from the springform pan, but gently remove the baking paper underneath it. Now place it on your serving dish. Once it is secure on your serving dish, remove the springform pan and surrounding baking paper.
Smear and arrange extra whipped Cream around the sides and edges of the cheeselova. Then top with passionfruit pulp, strawberries, and blueberries. Sprinkle with some chocolate and enjoy!
You can add any fruit you desire and top your cheeselova with it. Also, the topping can be different forms of chocolates, caramels and toffees.
