This easy cantaloupe bread will be a nice treat on your table to significantly serve your guests. It is made with simple ingredients and it’ll get ready before you know it. Both kids and adults will love it.
Preheat the oven to 325°F (176°C). Grease and flour two 9X5 inch (23x13x6 cm) loaf pans. Set it aside.
Cut the cantaloupe into pieces, and blend them in a blender to make about 2 cups of cantaloupe puree. You want a smooth and soft texture.
Choose a large bowl and beat the eggs together. Sift the all-purpose flour, add the sugar, salt, baking powder, baking soda, cinnamon powder, and ginger. Add the cantaloupe puree to the flour mixture. Use a spatula and fold the ingredients. Be careful not to overmix. Do not overwork the cantaloupe bread batter. Mix until there is no trace of flour or lumps.
Add the cantaloupe bread batter into the greased loaf pans. Place them in the preheated oven and bake for 55-60 minutes until an inserted toothpick comes out clean.
While the cantaloupe bread is baking, you can start making the glaze. Sift the powdered sugar into a pan. Add the vanilla to the sifted sugar. Stir the cantaloupe milk one tablespoon at a time until you have a thick glaze with desirable consistency. By lifting the whisk, the mixture should fall in a consistent stream and form a ribbon.
Once done, remove the delicious cantaloupe bread loaves from the oven and place them on a cooling rack. Let them cool in the pans for 15 minutes, then remove them from the pan.
Put a wax paper under the rack, and start to glaze the loaves. Pour the glaze mixture over both loaves, and try to cover the tops of both. The drips of glaze will fall onto the wax paper.
