Step 1

Preheat the waffle iron according to the manufacturer’s instructions. Melt the  dairy butter in a small pan and let it cool a bit.

Step 2

In a small bowl, mix the flour, baking powder, and salt and set the dry ingredients mixture aside.

Step 3

Pick a large bowl and whisk the eggs. Add the milk to the eggs. Slowly add the milk-egg mixture to the dry ingredients while whisking constantly. Stir until all lumps are gone and completely combined.

Step 4

Slowly add the melted butter to the mixture and continue whisking until fully incorporated and a glossy batter is obtained. Slowly add the water and whisk until combined.

If your batter does not have a consistent texture yet, you can add more milk or water, the final batter should not be too thin or runny or too thick that it clings to your whisk.

Step 5

Add the grated Cheddar cheese, whisk until combined. Use a wooden spoon to mix it easier.

Step 6

Use a ladle to pour the batter into the preheated waffle iron and cook for 5 minutes or until they’re golden and crispy (according to the manufacturer’s instructions). Serve immediately!

Enjoy your hot melty Cheddar Waffles with your favorite toppings, including crispy turkey bacon mixed with Willie Cream Cheese, maple syrup or honey, smoked salmon or lox, sour cream, chopped chives, or dill.

Cooking Notes

You can refrigerate the prepared cheddar waffles for up to 24 hours or freeze them for up to 1 month. Then before serving, toast them in a 325°F (160°C) oven for about 5 to 7 minutes until warmed through.

You better grease the waffle iron first to prevent them from sticking to the tray.

If you like having more crispy waffles, the secret ingredient is cornstarch. Mix 1 tablespoon of cornstarch with flour. Then, you can be sure that your waffles will be deliberately crispy on the outside and tender on the inside.

For extra light cheddar waffles, you should separately whisk the egg yolks and egg whites. Mix the yolk into the wet ingredients. Then, beat the egg whites until stiff and soft peaks form. After you combine the dry and wet ingredients, add the egg whites. Beating the egg yolks and egg whites separately creates extra light waffles.
