This incredible Date Pudding with Butterscotch Sauce cake is sweet, dense, and moist with its special sauce. This dessert will bring joy and flavor to your table. You can make it for different occasions, and be sure that everyone will love it. Date pudding is not difficult to make, and it doesn’t take long to be ready. This amazing dessert will be even better with cold milk or Kalleh Vanilla Ice Cream on the side.


Step 1

Now to start with making the date pudding, place the pitted dates in a small saucepan. Add the water and stir. Bring the mixture to a boil over high heat. Next, remove from the heat and stir in the baking soda and butter. The baking soda will become foamy, and the butter melts. After finished, set aside for about 30 minutes to cool completely.

Step 2

Grab a pan and start with greasing it well. Line it with parchment paper. To do this, cut a circle out and place it in the bottom of the pan. For the sides, cut a strip of parchment paper about an inch taller than the pan height. Then put it around the inside of the pan. Set aside.

Step 3

Go on and preheat the oven to 350F. Position oven rack on the lower third of the oven. This way, the top of the pudding will be about the center of the oven.
Now in a medium bowl, mix flour and brown sugar. Break up the clumps and set them aside. Use a skewer and pierce the pudding in various places. To make the cake moist, pour about ½ cup of the butterscotch sauce over the pudding and let it sit for five minutes. The sauce will be absorbed in the pudding.

Step 4

Add the cooled date mixture to a food processor or blender. Pulse a few times to create a soft, thick, and chunky paste. Then add the eggs and vanilla to the date mixture. Pulse until smooth. Add the date mixture to the flour and brown sugar mixture. Fold the mixture slowly until combined.

When the process is finished, pour the mixture into the prepared pan. Place in the preheated oven and bake for about 50 minutes or until the pudding has a springy texture. Remove pudding from the oven and place it on a cooling rack for 15 minutes.

Step 5

While the pudding is cooling, you can prepare the delicious sauce. Put the sauce ingredients, including date-flavored milk, brown sugar, heavy cream, corn syrup, and butter on a small saucepan and stir them well. Cook the mixture over medium heat and stir constantly. Continue until the sauce comes to a simmer, lower the heat, and cook for about five more minutes. Remove from the heat and set aside.

Step 6

Remove the pudding from the pan, and slice it. Serve on a flat plate and pour the remaining butterscotch sauce over each slice. You can side it with a scoop of vanilla ice cream.
