The first step to make this fabulous baked carp is preheating the oven to 400°F (200°C).
Put the potatoes into a medium pot. Cover with salted water and bring it to a boil over high heat.
Once boiling, reduce the heat to medium-low and simmer the potatoes until they are just tender. It will take about 25 minutes.
Drain the potatoes and peel them until they are still warm. Set them aside. Once cool, slice the potatoes crosswise into ⅓ inch (0.3 cm) thick slices. Drizzle a skillet with oil and place it on the stovetop. Cook the bacon over medium heat until it is crispy and golden, about 6 to 8 minutes.
