Cherry tomatoes are the perfect sweet compliment to chicken breasts, and combining them with fresh Mozzarella is heaven for foodies.
Preheat the oven to 220°C (430°F). Lightly spray a baking dish with cooking spray.
With a sharp knife, slice the red onion thinly, and halve the cherry tomatoes. Arrange the prepared tomatoes and red onion at the bottom of the dish, season with salt, pepper, dried oregano, and basil. Mix them and set them aside.
Place the chicken breasts on your board, drizzle with some olive oil, season with salt, pepper, oregano, and basil.
