  • 2cupscracked freekeh (green durum wheat that is roasted and rubbed)

Step 1

Are you ready to make the best chicken with freekeh? Start by picking over freekeh, removing any debris, and rinse it in cold water until the water looks clear. Soak the freekeh in cold water for 30 minutes, then drain it and set it aside.

Step 2

In a heavy-bottomed large skillet, heat the olive oil over medium flame. Add the chopped onions and cook until they are golden brown and translucent for about 5 to 10 minutes.
Transfer the freekeh to the skillet and season the mixture with salt and pepper to taste.

Pour in about 3 cups of water, turn up the heat and bring the chicken with freekeh sauce to a rolling boil. Cover and turn down the heat. Cook the freekeh until it is tender for about 25 minutes, stir the mixture a couple of times.

To assemble your chicken with freekeh, lay the meat on top of the cooked freekeh and sprinkle with fried almonds and garnish with fresh chopped parsley.
