Instructions

Step 1

First, open out each chicken breast, and with a sharp knife, cut them into three lengthways. This way, they will become smaller and thinner and make desirable bit-sizes. Put the pieces into a freezer bag, add the lemon juice, three tablespoons of olive oil with salt and pepper. Combine the mixture until finely coated. Put it in the fridge for 30 minutes.

Step 2

While the chicken is resting, start with the sauce. Add the Greek Yogurt to a large bowl. Then add in the finely chopped scallions and chopped chili. Peel and mince the garlic cloves and add them to the yogurt bowl. Peel and cut the cucumber and add it to the mixture. Chop the coriander and mint (reserve about one teaspoon of both for garnish) and add to the bowl. Mix all the ingredients until well-combined. Taste, and if necessary, add some salt and pepper to taste.

Step 3

Heat a large skillet over a high flame. Add two tablespoons of olive oil. When heated, take the marinated chicken breasts out of the bag and place them in the heated pan. Fry for about 4-5 minutes until golden outside and thoroughly cooked through. At the last minute of frying, add half of the lemon marinade to the pan. It will give the meat a desirable sharpness and gloss.

Step 4
