Step 1

On a frying pan, heat the butter, add your onion, and cook it until it looks soft, caramelized, and translucent. Add the finely minced garlic, chopped ginger, green chilies, and sauté for 30 seconds until you smell the spices. Then add sweet corn, and cook them for 2 minutes.

Step 2

Chop the spinach leaves into almost medium pieces and fry them until they wilt. Since spinach loses so much volume when cooked, you can add more/less to your taste.
Season the mixture with black pepper, red chili flakes, cumin powder, make sure they are coated thoroughly. Add the chopped coriander & mint leaves and give it a good mix.

Step 3

Mix two tablespoons of flour with the vegetable mixture, then pour ½ cup of warm milk. Stir constantly. Let it simmer for 2-3 minutes. When the mixture looks thicker, add the Shredded Mozzarella Cheese and mix the ingredients nicely. When the cheese is fully incorporated, remove it from the heat.

Step 4

These sandwiches taste better with toasted bread. To toast your bread, you can use a griddle, grill, sandwich maker, or even a skillet. Brush the inner sides of the bread with room-temperature soft butter, place them on your grill pan, 1 minute is enough for each side.

Step 5

Put the toasted bread on your work surface, place the thin slices of Esrom Cheese on them, then spread the cheese mixture of vegetables, top that with another bread slice. Cover and let it grill until done.

Step 6

Remove the sandwiches from the heat, and slice them diagonally with a sharp knife, serve immediately on a dinner plate and side it with some ketchup, chutney, or other dips you like.

Cooking Notes

You can also add other cooked vegetables to it like tomato, sweet potato, carrot, peas, beans, and bell pepper. Also, adding some boiled pasta to this cheesy spinach filling is an excellent idea for a different healthy dish.

You are free to change the bread type. White Bread/Brown Bread, Baguette, Burger Buns, and even Croissant will match with this delicious filling.
