  • 100gramsground meat lamb/beef mixed
  • 1large onion (grated)
  • 2eggs
  • 75 bread crumbs
  • 2+4 crushed garlic cloves

  • 3eggs (hard-boiled)

  • 100gramswater

Dalyan Köfte is a middle eastern meatloaf filled with boiled eggs, peas, carrots, and potatoes soaked in a distinctive tomato sauce. You can serve Dalyan kofta with fluffy rice or mashed potatoes for lunch or dinner.

Step 1

There are a few and easy steps to make this delicious Dalyan kofte. Use a food processor to crumble the bread, onion, garlic, and parsley.

Place the meat, vegetable mixture, salt, and pepper in a bowl. Add the eggs as well. Remember to save one of the whites for glazing. Knead the mixture for about 10 minutes until all the ingredients are well combined.
The more you knead, the better. Keep your middle eastern meatloaf mixture in the fridge for at least 30 minutes to rest.
When you take it out of the fridge, knead it for 5 minutes, and then start shaping.

Step 2

For the next step, you should prepare the filling for your Dalyan kofte. Boil the eggs until done. Peel, keep whole, and do not cut them. Steam or boil the carrots and potatoes.

Cut them into three vertical slices. Stream or boil the fresh peas.
If you are using canned or frozen peas, you do not need to do anything.

Preheat the oven to 160°C (320°F).

Step 4

To combine and assemble the middle eastern meatloaf, line a baking tray with parchment paper. Then spread the meat mixture on the tray.

Make a rectangle shape. Starting from the rectangle’s broader side, place all the filling, including boiled eggs, carrots, potatoes, and peas, in a line in the middle of the meat mixture.
Leave some spice to the sides.

Roll the opposite side of the meat in the middle to form a thick log. Close the ends and seal it. Turn the Dalyan kofte log over, so the line is facing downwards.

Spread the remaining egg white evenly all over the meatloaf with your hand or with a brush.

This will prevent the log from cracking while cooking.

Step 5

Cook the fabulous middle eastern meatloaf in the preheated oven for 45 minutes. Once in a while, spoon the stock and spread it on top of the meat, so it does not get dry.
Remove from the heat and let it stand for 10 minutes before serving.

Step 6

To make the best sauce ever, first, melt the butter in a pot. Add the crushed garlic. Saute for a few seconds.
Add in the crushed tomatoes and tomato paste. Cook it for 5 minutes.
Add some hot water if necessary. Add the vinegar, salt and thyme, give the sauce a nice stir.
Cook it for another 5 minutes until you have a thick and silky sauce for your egg and vegetable-filled meatloaf.
Cut the kofte into desirable pieces and pour the delicious tomato sauce over it. Enjoy the Dalyan kofte warm and sided with a green salad or pita bread.
