The recipe for this delicious Goat Gouda Cheese Broccoli Rice meal is easy and simple. You can be creative with the vegetables, but steamed broccoli, with its tender texture, makes it an irresistible serving.

Step 1

Preheat the oven to 375ºF (190ºC).

Step 2

Add the rice with 3 cups of cold water in a large pot.  Stir in one tablespoon of olive oil and a pinch of salt. Set it on medium heat, cover, and cook for about 10 minutes until done.

Step 3

Put a steamer basket in a large saucepan, add water below the bottom of the steamer basket. Bring the water to a boil. Cut the broccoli into spears. Place the slices on the basket, cover and reduce the heat to low and let it steam for 6 to 8 minutes until just tender and a bit firm.

Step 4

Heat the Dairy Butter in a nonstick skillet, stir in the finely chopped onion, cook until soft and translucent.

Then add in the crushed garlic cloves, sauté for 2 minutes until fragrant. Stir in the all-purpose flour, salt, and paprika. Mix the roux nicely till all the clumps are dissolved. Gradually pour in the coconut milk. Occasionally stir, and cook until thickened and bubbly. Add the onion powder, salt, and pepper. After 5-7 minutes, add in the Goat Gouda Cheese, stir till it is melted. Then remove from the heat.

Step 5

In a large bowl, add in the cooked rice, steamed broccoli, and pour the cheese sauce over it. When everything is well combined and incorporated thoroughly, transfer it to a baking dish.

Step 6

Butter a gratin dish, and add in the rice and broccoli mixture. Arrange them in an even layer. Sprinkle with Shredded Cheddar Cheese. Cover it with foil and bake in the heated oven for about 30 minutes until the cheese is melted and shiny.

Step 7

Serve on your dinner plate and garnish with some chopped spring onions. You can side it with Roasted Vegetables and Green Salad. Bon Appetit!

Cooking Notes

You can make this stunning dish with chicken breast cubes. Add the chicken cubes to the butter and onion mixture and let it cook for 8 minutes. You can also side this Broccoli Rice with roasted turkey bacon or grilled ones.
