Healthy Veggie Bowl Recipe

  • 1cup lentils (red)
  • 2cups water
  • 1teaspooncoriander
  • 1teaspooncurry powder

  • 1/2 cup yogurt
  • 1/4 cup scallions (sliced)
  • 1/4 cup cilantro leaves
  • 4lime wedges
  • 1head of cauliflower
  • 1-2tablespoons olive oil

Now more than ever, it seems vegetarianism has become a trend. Many would imagine it as simple as adding more vegetables and omitting animal-derived products, especially meat, as much as possible. However, eating vegetables and starting a veggie diet is not easy for those who have consumed meat all their lives. You will prepare a colorful and delicious veggie bowl here that will make your eyes sparkle. 

We will have both warm and cold foods in our veggie bowl. The combination is delicious. The cauliflower and lentils bowl has 280 calories, 3 grams of fat, 49 grams of carbohydrates, and 4 grams of sugar. You will have enough calories to fulfill your needed energy by making this fantastic bowl. Neither is there so much sugar or carbohydrates to make you fat or harm your body. 


Step 1

To make the veggie bowl, first, chop the soft parts of the cauliflower and throw out the tough parts to have a tender result.

Step 2

It would be best to chop the cauliflower until it looks like rice. Bring a food processor, put the cauliflowers in, and turn on the machine. Depending on the hardness of the cauliflower, you may need to blend it more than once. Blend it till the chunks of cauliflower are smashed and turned into tiny grains. Now the rice is ready. Mix it with olive oil, season it with salt and pepper, and put it aside.

Step 3

Pour water into a pot and add lentils, curry powder, cumin, and coriander. Put the pot on a medium fire and let it slowly boil. Continue boiling until the lentils are tender and not much water has remained. Now you can add salt and pepper.

Step 4

Start peeling the carrots and cutting them into wide ribbons.

Step 5

Pour your veggie mixture into four bowls or a single big bowl and add the lentils at the top.

Step 6

Put carrots on the bowls and then add yogurt, scallions, cilantro, and wedges of lime.

Step 7

Move the bowls to the table and serve them. 

Cooking Notes

Wash the lentils before using them to make sure it is clean. 

You are free to choose any yogurt of your choice. Still, plain yogurt is better since it does not contain any artificial or chemical materials. 

Peel the carrots to look a lot better; it can make the digestion process more efficient, too. You can chop them as well. 

It is possible to substitute cucumber for carrots in this veggie bowl, which will improve the taste of your bowl. 

For boiling the lentils, you can use vegetable broth instead of plain water. It can change the flavor of your veggie bowl, however. 

You can keep the cauliflower in the refrigerator for up to five days. 

Turning this bowl into a vegan dish is as simple as committing the yogurt altogether or replacing it with non-dairy options.
