Over medium-high heat and in a large non-stick skillet, cook and crumble the sausages. Line a plate with a paper towel and place the cooked sausages on it. Crack the eggs into a bowl, add in the water, and whisk until thoroughly incorporated. Heat a large skillet over medium flame, melt the butter, and swirl to coat it thoroughly. Pour the egg mixture into the middle of the skillet. (This way, the butter will move to the edges of the egg). Cook it without stirring for about 2 minutes and sprinkle with crazy salt.
Once the eggs start to set, gently stir, and fold them until the liquid is gone, and they seem almost cooked. Remove from the heat while the eggs are slightly wet. Add in the sausages, and give them a nice mix. Try to break the egg clumps. Transfer the egg and sausage mixture to the plate with a paper towel.
Shred the Monterey Jack and Colby cheese, and place them in a bowl. Next, add in the Pinka cheese (Portion) clumps and mix them gently.
Wipe the skillet with a paper towel, return to the heat—butter one side of each bread slice.
Once the skillet is hot enough over medium heat, place the bread slices in the skillet buttered-side on. Sprinkle the slices with two tablespoons of the cheese mixture. Then scoop about 3-4 tablespoons of the egg and sausage mixture onto the bread slices and spread all over the bread. Sprinkle another two tablespoons of cheese mixture over them, and top with baby spinach leaves. Sprinkle the third layer of cheese, and place the second buttered bread slice over it. The butter side is face out.
Reduce the heat, and cover the skillet with a lid—Cook the toasts for 3-4 minutes on each side. Once the cheese is melted and the bread looks golden and crispy, use a spatula to flip it over gently. Use the lid again to cook the other sides as well. When the sandwich is cooked throughout with melted cheese and a golden-brown look, remove it from the skillet and place it on a cutting board.
