Do you often have so much leftover food that you don’t know what to do with it? Kimchi Fried Rice is a tasty Korean dish that you can cook at home with simple ingredients, and you can also throw in everything you have sitting in the fridge.
It is usually made with turkey bacon, although you can use chicken or even ground beef. This dish has the delicious taste of meat combined with the crunchiness of Enoki mushrooms, and the sunny-side-up egg on top just makes everything look beautiful. Serve hot on a plate and garnish with green onions and sesame seeds.
Pre-heat a pan on medium-high heat and add the cooking oil. Spread the oil well in the pan.
First, add the garlic and stir it for a few seconds. Then, stir in the turkey bacon. Continue to stir until the bacon is half-cooked.
Then it is time to add the Kimchi. Keep stirring.
When almost 80% of the Kimchi is cooked, add the mushrooms. Combine them well with other ingredients.
Reduce the heat to medium-low, and then you need to add the kimchi juice and the steamed rice. Combine them properly.
Sesame oil must be added before you remove the pan from the heat.
Garnish the plate with sesame seeds, green onion, and seaweed strips. Put the cooked egg on top of the Kimchi Fried Rice and enjoy this delicious meal.
The Kimchi should be at least two weeks old. If you are using fresh Kimchi, make sure to add 1/2 teaspoon rice vinegar into the Kimchi juice.
It is ideal to use day-old rice (stored for at least 12 hours) for fried rice.
Garnishing with green onions and shredded seaweed is optional.
This recipe calls for bacon. You can use other kinds of meat as well, or you could entirely make it without any meat.
