Step 1

To make the best dough for a Homemade Chicken Pizza, first, combine the yeast with sugar and warm water. Let the mixture stand for almost 10 minutes until bubbles appear on the surface. Choose a large bowl and mix the all-purpose flour, sugar, and salt.

Make a well in the middle and add the olive oil and the bloomed yeast mixture. Use a spoon to combine the ingredients until it starts to clump and forms a shaggy dough. Once combined and hydrated, dust the work surface with flour and place the dough onto it. Then use your hand and knead it for 10-15 minutes. Roll the dough on top of itself and then push forward. Rotate until it is fully incorporated.

Step 2

The dough is done when it has a soft, smooth, and bouncy texture. Meaning if you press the dough, it springs back right away. Form it into a taut round. Now drizzle a large bowl with olive oil and place the ball-shaped dough in it. Make sure you coat the dough thoroughly.

Cover with plastic wrap, and let rise for at least one hour. When ready, punch down the dough, and place it on the lightly floured work surface. Knead it for one or two minutes. Lightly flour the dough and cover with a kitchen towel, and let rise for the second time for about 30 minutes.

Step 3

Preheat the oven to 475°F (246°C). The red onion will add lots of flavor to this pizza. Use a sharp knife and slice it very thinly. To cook the chicken, one skinless, boneless chicken breast is enough. Once cooked, shred it into bite-size pieces, season with salt, pepper, garlic powder, and paprika.
