This amazing recipe is the combination of two insanely delicious things- meatballs and cream cheese sauce. It is fairly simple and super fast.
You can make these meatballs with cream blue cheese sauce for a family dinner, holiday meal, or a fancy lunch.
To make meatballs with Kalleh cream blue cheese sauce heat one tablespoon of extra-virgin olive oil on a nonstick skillet, add the finely minced onion and one clove of garlic, cook for 5 minutes until soft and translucent.
Chop the celery stalk, and spring onions, add them to the skillet. Sautee them for 2 minutes more. Set aside to cool completely.
Preheat the oven to 400ºF (200ºC).
In a large bowl, combine ground beef, vegetable mixture, breadcrumbs, egg, Kalleh shredded parmesan cheese, and mustard. Mix well and season with salt, black pepper, chili flakes, and sprigs of thyme.
Use your hand to mix the ingredients. Do not overwork the meat. Let it chill for 30 minutes in the fridge.
Before shaping the meatballs, have a bowl of cold water to wet your hand before rolling each one. Scoop about two tablespoons of the meat mixture and form it into one 1/2-inch meatball.
Continue shaping uniformly-sized meatballs until the meat is all used. Add the flour in a medium bowl and dredge the meatballs with it, make sure they are coated thoroughly.
Shake the excess and arrange the pieces on your baking dish. Then put the sheet in the fridge and let it cool down for another 15 minutes.
Once the meatballs are cold enough, drizzle two tablespoons of olive oil on them. Then bake in the preheated oven for 10-15 minutes, or until brown and tender.
While meatballs are baking, on a saucepan, heat the butter, sauté one crushed clove of garlic for 1 minute, pour the Kalleh full-fat milk and bring it to a boil, and then add the Kalleh cream blue cheese slices. Stir constantly. Reduce the heat to medium-low and let it simmer for 5 minutes.
When the meatballs are roasted, slowly drop them into the cream blue cheese sauce, rolling them around to coat and warm through—cover and cook for 2 minutes.
