For making a delicious mashed Cauliflower Casserole with cheese and bacon, preheat the oven to 350 F (176 C).
Wash and drain the cauliflower heads, and cut them into florets. Place them in a steamer basket in a pot with water. Then cover the top and bring it to a boil. Steam the cauliflowers for 10-15 minutes. You want them to be completely tender. Time may depend on the size of the florets. Remove them from the heat and drain them. You can pat them with a kitchen towel.
