There’s nothing quite like a warm bowl of Mushroom Parmesan Shrimp Risotto.
You’ll love delicious, creamy Mushroom Risotto. Loaded with Arborio rice, mushrooms, butter, and Parmesan, topped with seasoned, pan-seared shrimp this Risotto is perfect for a Friday night dinner.
It is not as hard to make as you might think. The only hard thing about making risotto is the continual stirring of the rice as you add in the broth. If you have all the ingredients ready to go before beginning this recipe, it’s not really a big deal!
To make a yummy Mushroom Parmesan Shrimp Risotto, cut mushrooms into quarters. Melt 1 tablespoon of Dairy Butter in a pan, add 1 tablespoon olive oil. Sauté mushrooms for several minutes until lightly browned. Add a pinch of salt to taste and cook for another minute. Remove pan from heat, and set aside.
Put a large saucepan over medium-high heat. Melt butter and olive oil. Add the onion and saute for 5 minutes. Add rice and cook it for just a minute.
Pour one cup of broth into the rice, and stir constantly. Let the liquid come to a boil. Each time the rice absorbs liquid, add more (1/4 cup) broth until all of it is gone. This process will take about 25-30 minutes till the risotto is soft and tender. (There should be only a little bit of liquid remaining).
Turn off the heat, then add prepared mushrooms, Parmesan Powder Cheese, salt, and pepper. Stir well to combine well. Cover the saucepan, and let sit for 5 minutes. While risotto is resting, cook the shrimp.
Meanwhile, you can cook the shrimp. Coat shrimp with garlic powder and dried parsley flakes and season with a bit of salt and pepper.
Melt butter and olive oil in a medium skillet. Add the shrimp. Cook 2-3 minutes on each side until the shrimp turns pink and curls up slightly.
Transfer risotto into a serving dish. Place shrimp on top of the risotto. Garnish with additional Parmesan Powder Cheese and parsley flakes. Now it is ready to serve, enjoy!
If you want Mushroom Parmesan Shrimp Risotto to be a vegetarian dish, simply omit the shrimp! If you don’t like shrimp you can use pan-seared chicken pieces.
