Instructions
Make the compound butter:
prepare a medium bowl, mix the butter, chives, pepper, Kalleh blue cheese, salt, and stir very well.
Put the Kalleh dairy butter in a piece of plastic wrap and roll it. Put it in a refrigerator for at least 1 hour.
Make the fried onions:
In a medium bowl, put the onions and pour buttermilk over them. Let it rest at room temperature for about 1 hour.
Put a medium bowl, whisk the flour, salt, pepper, paprika. Put the onions into the flour mixture, roll them and shake off extra flour.
Put a large saucepan with high sides on medium-high heat and fill it with canola oil. When it becomes hot, add the onions and fry them for 3 minutes until they become golden. Remove the onions from the saucepan and put them on a wire rack then season with a little salt; set aside.
Make the steak:
Season the steaks with salt and pepper completely.
Place a large cast-iron pan over high heat and add olive oil. Once the oil becomes hot, add the steaks and cook for about 7 minutes until a brown crust forms. Flip the steaks and let it cook for 7 minutes again, until the steak is browned on both sides. Add thyme and the prepared butter to the pan. Tilt the pan toward you and sauté the steaks with the melted butter for 2 or 3 minutes, until the internal temperature reaches 60°C (135°F) for medium-rare. Now the steak is ready to serve with the crispy onions and blue cheese compound butter. Enjoy!
Cooking Notes
You can serve the steak with Mashed Potatoes too.
Bring the steaks to room temperature before cooking.
If you have a thinner cut of meat then lower the cooking time
Make sure the unsalted butter is well softened in order to mix the other ingredients into it.
You can make this steak with strip steaks (New York steaks, shown), and filet mignon.
