Step 1

To make a delicious Shire Blue Cheese Chicken Breast, first, you have to preheat the oven to 425 °F.

Step 2

Bring a small bowl and combine one tablespoon of Dairy Butter, thyme, and  Shire Blue Cheese. Season with salt and black pepper; set it aside.

Step 3

Cut a line in the thickest side of each chicken breast, but not cutting all the way through, and form a pocket. Place cheese mixture into the pocket with a teaspoon, and season with salt and pepper.

Step 4

Butter a medium baking dish, and place the chicken breast in it. Put the baking dish in the oven, and bake for about 15 minutes (uncovered).

Step 5

Meanwhile, place potatoes in a pot with hot water and salt generously.

Step 6

Bring to a boil and cook for 8 to 12 minutes, until potatoes are tender. Remove from heat and drain carefully.

Step 7

Put potatoes in a bowl. Add butter to them and use a potato masher or a fork to mash potatoes thoroughly. Add Full-Fat Milk and stir until smooth. Season with salt, pepper, garlic powder, and more milk to taste; set the Mashed Potatoes aside.

Step 8

Melt the remaining one tablespoon butter in a saucepan. Then, pour lemon juice and whisk in paprika. Turn the chicken, brush with lemon mixture and bake an extra 10 to 15 minutes or until chicken is cooked thoroughly.

Step 9

Put the Shire Blue Cheese Chicken Breasts in a serving dish and place Mashed Potatoes beside them. Now it is ready to serve! Enjoy!
