Preheat the oven to 375°F (190°C). Butter an 8X8 inch (20x20x5 cm) baking dish and set it aside.
Heat a skillet over medium-high flame. Add the butter, chopped scallion, red bell pepper, and jalapeno pepper. Reduce the heat to medium and let the mixture cook for 4 to 5 minutes or until softened and caramelized. Mince the garlic and add it to the skillet.
Dice the tomatoes, green chili and stir in the mixture. Pour in the chicken broth. Bring the mixture to a boil for about 20 minutes, stirring occasionally. While bringing to a boil, slowly stir in the grits.
Stir the sauce continuously until the mixture starts boiling. Reduce the heat to low, and let it simmer for about 5 to 7 minutes or until thickened. Stir occasionally. Once the shrimp and grits casserole sauce is thickened, remove it from the heat and let it cool slightly. Season with salt and freshly ground black pepper.
Now, add the large shrimp, cooked crumbled bacon slices, beaten egg, and one cup of Gouda processed cheese (sliced). Mix until well incorporated. Transfer the flavorful mixture to the prepared baking dish. Sprinkle with the remaining Gouda processed cheese slices.
Place the amazing shrimp and grits in the preheated oven and bake for 30 to 35 minutes or until heated through and bubbling. Remove from the oven and let it stand for 5 to 10 minutes to cool. Serve this delicious meal sided with cooked pasta, roasted vegetable, green salad, or garlic bread. Enjoy!
