The recipe for this delicious Swede, Lamb, and Feta Bake is easy and quick. This one-pot recipe has a unique taste flavored with savory spices and the best of them, Feta cheese.
Heat one tablespoon of olive oil in a pan over medium heat. Add in the finely minced onion and cook until softened. Stir in the crushed garlic cloves and cook for one more minute. Add in the dried oregano, cinnamon, and chili flakes. Mince the lamb leanly and stir in the lamb and brown all over for about 3-4 minutes. Use a wooden spoon to break it up. Drain any excess fat/juice from the pan, and return it to the heat.
The next step is to add in the tomato puree and cook it for about 2 minutes. Then, add the slices of tomatoes (you can use tinned tomatoes). Pour in the beef stock—season to taste with salt and pepper. Let the sauce simmer for 15 to half an hour until it starts to thicken, then remove from the heat.
Preheat the oven to 180°C.
Take one large oven-proof roasting dish and lightly grease its sides and bottom with olive oil. Slice the swedes as thinly as possible. Then arrange a third of swedes at the bottom of the dish. Top that with the lamb mixture. Add another layer of swedes over it and add the lamb mixture again. Continue layering with the remaining ingredients. Finish with a layer of swedes.
Now, you need to make the topping sauce. Choose a small saucepan, and melt the French Butter over medium heat. Stir in the flour and whisk until you have a smooth and slick paste as the sauce’s roux. Remove from the heat and gently add in the ESL Full-Fat Milk. Stir until you have a soft saucy texture. Return to the heat and cook for 5-6 minutes or until it thickens. Remove from the heat and crack one egg into it and whisk it well to combine. Then add half of the Feta Cheese pieces and stir. Pour the sauce over the lamb and swedes’ mixture. Top that with the reserved Feta cheese.
Cover the dish with foil, and bake it in the preheated oven for 35-45 minutes. Then remove the foil, and bake for 25-30 minutes more. By this time, the top will look golden, and swedes are tender. Before removing from the oven, make sure the swedes are fully and thoroughly cooked. Leave for 5 minutes and then serve it on your dinner plate.
