Using a skillet, heat vegetable oil over medium flame. Stir fry onion in hot oil for 3 minutes until onion becomes translucent. Stir in garlic, cumin, paprika, coriander, and chili powder. Continue frying for 30 seconds to 1 minute.
Pour chicken broth, tomato sauce, and salsa into the skillet, and stir to mix well. Let the mixture come to a boil and turn the heat down to low. Simmer the mixture for about 6 minutes while stirring occasionally. By this time, most of the liquid of the mixture evaporates, and a thick sauce results. Stir in sour cream, cooked chicken, salt, and black pepper.
Leave a 5-centimeter margin from the edges of the Tortilla. Spoon refried beans into the center of each Tortilla. Place 1/3 cup chicken mixture over refried beans and top with three tablespoons of Cheddar Cheese.
Bring the sides together in the center. Fold over the bottom and up, creating a rectangle, and fasten with a toothpick.
Heat vegetable oil over a medium-high flame and fry 2 filled tortillas in hot oil until the bottom turns golden brown. Then flip over and fry the other side. Remove filled tortillas from oil and place them on a paper towel to drain the grease. Repeat the process for the remaining tortillas.
Garnish with sour cream, sliced tomato, guacamole, or salsa, and serve warm.
Ground beef or turkey bacon also provide a great alternative to chicken.
To have a more health-friendly dish, preheat the oven to 200 c and bake filled tortillas for 8-10 minutes.
