After heating two tablespoons of olive oil in a saucepan, add the thick-cut bacon until it begins developing a nice color with a crispy look.
Then add the Thai chili slices, red pepper flakes, and chopped garlic, cook them over medium heat until everything begins to toast.
Scoop everything from the pan to a cutting board and chop them finely into tiny pieces. Place them back into the pan, and add the crushed tomatoes, season it with salt, pepper, and sugar. Stir constantly and let the sauce simmer.
Stir occasionally for 15 minutes. When it is thick and slick, add 1/2 a cup of your parmesan cheese, and one tablespoon of thyme. Remove from the heat.
On a cutting board cut the skinless, boneless chicken breasts in half but not all the way through. You want them in a butterfly shape. Now put them in a plastic wrap, and flatten them until slightly thinner than half an inch.
