Instructions

Step 1

After heating two tablespoons of olive oil in a saucepan, add the cut turkey bacon/ duck prosciutto until it begins developing a nice color with a crispy look. Then add the Thai chili slices, red pepper flakes, and chopped garlic, cook them over medium heat until everything begins to toast.

Step 2

Scoop everything from the pan to a cutting board and chop them finely into tiny pieces. Place them back into the pan, and add the crushed tomatoes, season them with salt, pepper, and sugar. Stir constantly and let the sauce simmer.

Stir occasionally for 15 minutes. When it is thick and slick, add 1/2 cup of your Parmesan cheese, and one tablespoon of thyme. Remove from the heat.

Step 3

On a cutting board, cut the skinless, boneless chicken breasts in half but not all the way through. You want them in a butterfly shape. Now put them in a plastic wrap, and flatten them until slightly thinner than half an inch.

Step 4

Now, in a medium bowl, beat the eggs with one tablespoon of water. In the second bowl, add your flour (mix it with one teaspoon of salt, black pepper, and garlic powder), and the third one is for the panko breadcrumbs.

Now dredge the chicken breast in the flour, shake the excess off, transfer it to the egg wash, toss it in the breadcrumbs, and coat it thoroughly. Press it so that every crevice is filled with panko. Repeat these steps for the remaining chicken breasts.

Step 5

Preheat the oven to 375ºF (175ºC).

To fry your chicken, place a large deep pan on your stove, fill it up about halfway with your frying oil, set it on medium heat for 2 minutes. Take the coated chicken and lay it in the oil. Let it fry for 3-5 minutes and flip it over and repeat on the other side. You want them to be golden crispy.

Place the crispy chickens on a wire rack to cool, and do the same for the rest of the chicken breasts.

Step 7

Place the fried chicken onto a foil on a baking sheet, cover each piece nicely with the amazing tomato sauce, and top generously with the rest of your Parmesan cheese. Put it in the oven for about 8-10 minutes until the cheese melts and gets brown and bubbly.

Cooking Notes

If you want to skip the chicken frying part and make it healthier, you can toast and bake them in the oven for 30-35 minutes. You must divide this time between each side for a fully cooked, crispy texture.
