Ingredients

  • 250 grams bulgur wheat
  • 350milliliters of boiling water
  • 2tomatoes (purée)
  • 2tablespoons olive oil
  • 2tablespoons pomegranate molasses
  • 1tablespoon lemon juice
  • 3plum tomatoes, finely chopped
  • 1finely choppedPersian or Lebanese cucumber
  • 2small spring onions, finely sliced
  • fresh ground pepper to the taste
  • 2teaspoons salt (to the taste)
  • 3tablespoons Turkish chili (optional)
  • 15grams walnuts, roughly chopped (optional)
  • pomegranate seeds (1/2 a pomegranate)
  • 4tablespoons parsley, finely chopped
  • a handful of mint leaves, finely chopped

Instructions

Step 1

Using a kettle, bring 350-milliliters of water to a boil over high heat.

Step 2

Pour boiling water over bulgur wheat in a large bowl until a 1-centimeter layer of water covers the bulgur wheat. Set the bowl aside for about 20 minutes. By doing so, wheat will be able to absorb water.

Step 3

In a separate bowl, add pomegranate molasses, tomato puree, olive oil, and lemon juice. Mix well.

Step 4

When the bulgur wheat is ready (after 20 minutes), remove the cover and throw away the remaining water. Then add tomato puree mixture and blend until well incorporated.

Step 5

Add finely chopped cucumbers, tomatoes, parsley, mint leaves, sliced onions, pomegranate seeds, walnuts, and mix well.

Step 6

You can season the salad with salt, ground pepper, and Turkish chili according to your taste.

Step 7

Allow it to cool to room temperature. Enjoy the scrumptious taste of pomegranate seeds, parsley, and mint as a garnish.

Cooking Notes

If pomegranate molasses is not available, use lemon juice and a bit of maple syrup instead.
