In heat-treated yoghurt, the existing bacteria will be killed through the post-fermentation process to prolong the shelf life and decrease the yoghurt&#8217;s natural tartness. In some rare cases, during yoghurt-making, bacteria may survive. In a different process, the milk will be pasteurized again after the cultures are added, so the bacteria are destroyed. This will produce the heat-treated yoghurt. Kalleh heat-treated full-fat yoghurt has a desirable consistency, spoonable texture, and milky taste.
