The cheese is reminiscent of the delicious pesto sauce which typically consists of parmesan, crushed garlic, basil leaves, peanuts, and olive oil. The green color of the sauce is attributed to the pigments in the basil leaves. The cheese has a maturation period of 45 to 60 days. It is loaded with calcium, easy-to-digest protein, phosphorus, and various vitamins. Its nutritional value is equivalent to that of 12 to 14 kilograms of fresh cow milk.
